The process? Her Copper Kitchen chooses perfectly ripened and fresh citrus, soaks them in a vinegar and baking soda brine to remove any pesticides and then wash and dry them thoroughly. They are then sliced, seeds removed and flash frozen before they enter the freeze dryer chamber. 30-40 hours later, the citrus has become beautiful crunchy rounds, their natural flavours have intensified and the fresh aroma abounds.
